Ingredients required :
- 2¼ cups white granulated sugar
- 1/2 cup water
- 1/2 cup corn syrup
- 1 pinch salt
- Nonstick cooking spray
- Food coloring
Procedure :
1. Cover your work surface with a big piece of plastic wrap or a tarp. This project can also be carried out outside, but be prepared for mess! Lightly spritz the nonstick frying spray on a wire cooling rack.
2. Mix the sugar, corn syrup, water, and salt in a big pot over medium heat. Stir the sugar until it melts. Take a precise temperature reading of the liquid using a candy thermometer. To 320 degrees, heat.
3. Pour the liquid molten sugar into a heat-resistant basin once it reaches the required temperature. With the sliced whisk, add any food colouring or flavouring extract and thoroughly mix.
4. Working fast, quickly pour the molten sugar syrup over the tray with the special whisk, letting a few wisps of the liquid fall to the bottom. Continue dripping the whisk back and forth until you have a few strands of sugar starting to resemble a nest.
5. Gather the wisps in your hand and roll them into small balls to place around the cones or lollipop sticks. Serve right away.
